Banana Pancake with Green Plantain Flour


INGREDIENTS:

  • 260g Green Plantain Flour
  • 2 eggs
  • 90g butter
  • 1 spoon of vanilla
  • 4 pieces of ripe bananas (roatan or male)
  • 1 tablespoon of baking soda
  • 1/2 teaspoon xanthan gum
  • 1 pinch of salt
  • 4 tablespoons of fresh cream
  • 1/2 cup of chopped walnut (optional)
  • 230g of refined sugar

PROCESS:

  1. Cream the butter in the blender, then slowly add the sugar in the form of a cascade and continue beating.
  2. Then add the eggs one by one, add the vanilla and continue beating.
  3. Peel the bananas and make a puree and incorporate in the blender.
  4. Then incorporate the flour together with the xanthan gum, the walnut and the bicarbonate and salt little by little and finally add the fresh cream and beat until a uniform mixture is obtained, remove from the blender.
  5. In a previously greased and floured mold add the mixture and bake at 180 ° C for 45 min.
