Carrot cake with Green plantain flour
Ingredients:
- 225g of Green plantain flour
- 4 eggs
- 130g of honey
- 165g sugar
- 1 cup vegetable oil
- 1/2 teaspoon xanthan gum
- 2 tablespoons vanilla
- 1 teaspoon Royal
- 4 tablespoons ground cinnamon
- 1/4 teaspoon ground nutmeg
- 2 cups of carrot grated
- 1 cup of raisins
- 3/4 of walnut chopped
PROCESS:
- Put the eggs, sugar, honey, vegetable oil and vanilla in the mixer.
- Then add the dry ingredients (green plantain flour, xanthan gum, royal, cinnamon and nutmeg) until it is perfectly integrated. Finally add the grated carrot, walnut and raisins.
Note: add a little green plantain flour to the raisins and walnuts before adding them to the mixture.
- In a previously greased and floured mold add the mixture and bake at 180 ° C for 45 min.
It can be decorated with a cream cheese frosting
