Carrot cake with Green plantain flour


Ingredients:

  • 225g of Green plantain flour
  • 4 eggs
  • 130g of honey
  • 165g sugar
  • 1 cup vegetable oil
  • 1/2 teaspoon xanthan gum
  • 2 tablespoons vanilla
  • 1 teaspoon Royal
  • 4 tablespoons ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 2 cups of carrot grated
  • 1 cup of raisins
  • 3/4 of walnut chopped

PROCESS:

  1. Put the eggs, sugar, honey, vegetable oil and vanilla in the mixer.
  2. Then add the dry ingredients (green plantain flour, xanthan gum, royal, cinnamon and nutmeg) until it is perfectly integrated. Finally add the grated carrot, walnut and raisins.
    Note: add a little green plantain flour to the raisins and walnuts before adding them to the mixture.
  3. In a previously greased and floured mold add the mixture and bake at 180 ° C for 45 min.

    It can be decorated with a cream cheese frosting
