Patty with Green plantain flour
Ingredients:
- 500g Green plantain flour
- 1 egg
- 1 egg yolk
- 250g of vegetable shortening
- 110 ml of soda coca cola
- 1 teaspoon xanthan gum
- 90g of honey
- 1 pinch of salt
- 300g of jam of your choice (guava, pineapple, Nutella, cajeta)
PROCESS:
- Beat the vegetable shortening with the plantain flour together with the xanthan gum until it forms a sandy mixture, then add the honey, then the egg and the yolk and the Coca Cola.
- Mix until you get a smooth paste. (refrigerate it for a period of 30 min.)
- On a table, make balls of the desired size, approximately 40 grams each, and spread with a roller or with the help of a steamroller to make tortillas and make the empanadas with the filling of your choice.
- Place the empanadas on trays and bake at 175ºC for 20 min.
