Patty with Green plantain flour


Ingredients:

  • 500g Green plantain flour
  • 1 egg
  • 1 egg yolk
  • 250g of vegetable shortening
  • 110 ml of soda coca cola
  • 1 teaspoon xanthan gum
  • 90g of honey
  • 1 pinch of salt
  • 300g of jam of your choice (guava, pineapple, Nutella, cajeta)

PROCESS:

  1. Beat the vegetable shortening with the plantain flour together with the xanthan gum until it forms a sandy mixture, then add the honey, then the egg and the yolk and the Coca Cola.
  2. Mix until you get a smooth paste. (refrigerate it for a period of 30 min.)
  3. On a table, make balls of the desired size, approximately 40 grams each, and spread with a roller or with the help of a steamroller to make tortillas and make the empanadas with the filling of your choice.
  4. Place the empanadas on trays and bake at 175ºC for 20 min.
