Muffin banana oats with Green plantain flour
Ingredients:
- 220g Green plantain flour
- 1 egg
- 1 cup of ground oatmeal
- 2 tablespoons plain Greek yogurt
- 1/4 cup vegetable oil
- 1/2 teaspoon vanilla
- 1/2 teaspoon xanthan gum
- 2 and 1/2 teaspoon Royal
- 1 pinch of salt
- 1 cup dried cranberries
- 125 ml of milk
- 175g standard sugar
- 3 pieces of ripe bananas (roatan or male)
FOR COVERAGE:
- 1/4 cup walnuts
- 1/4 cup oatmeal
- 2 tablespoons of sugar
- 2 butter spoons
PROCESS:
- Mix oil, sugar, egg and bananas. Add the previously sifted dry ingredients and the blueberry. Cover with the topping that was previously mixed and bake for 20 min at 200° C.
