Strawberry Muffins with Green plantain flour


Ingredients:

  • 275g Green plantain flour
  • 2 eggs
  • 155g plain Greek yogurt
  • 120ml vegetable oil
  • 1/2 teaspoon vanilla
  • 1/2 teaspoon xanthan gum
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 100g of sugar
  • 1 1/2 cups fresh strawberries (strawberry jam can be substituted)

PROCESS:

  1. Prepare the dry ingredients, sift the flour, baking soda, salt and mix with a spoon to distribute the ingredients very well and set aside.
  2. Beat the eggs with the sugar until creamy, it can be with a mixer or with a balloon whisk, then add the vanilla, Greek yogurt and vegetable oil and continue beating.
  3. Then the mixture of dry ingredients is incorporated in an enveloping way.
  4. Finally add the finely chopped fresh strawberries or the strawberry jam in an enveloping form.
  5. Place the cups in a muffin tray and place the mixture at ¾ of the cups and bake at 200ºC for 20 min.
